Klein River Cauliflower Bake
1 Large cauliflower (700g) broken roughly into florets
Unsalted Butter (30g)
Small Onion finely diced
Medium Curry Powder
Black mustard seeds
Klein River Cheese Colby
Preheat oven to 180 degrees C.
Steam cauliflower until just soft.
Saute butter and onion in an ovenproof dish over medium heat.
Add the cumin seeds, curry powder, mustard powder and chillies and cook for 4 minutes, stirring occasionally.
Add the mustard seeds, cook for a further minute, then pour in the cream. Add 100g Colby and ½ tsp salt and simmer for 2-3 minutes for the sauce to thicken slightly.
Add the cauliflower, stir gently and simmer for a further minute before removing from the heat. Place the remaining Colby in a bowl and add breadcrumbs and parsley, mix, then sprinkle over the cauliflower.
Bake for 8 minutes until the sauce is bubbling and the cauliflower is hot. Turn the grill to high until the top is golden and crisp.
