Klein River Cheese Havarti Farmstead Frittata
Klein River Havarti (2 cups grated)
Spinach (5 large leaves)
100g Spring Onions (finely chopped)
1 tsp of Mixed Herbs
2 tbl spoons of flour
4 extra large eggs (beaten)
1 cup of Milk
1.5 tsp Olive Oil
Cooking Time: 40min (total)
Cut the spinach leaves into strips and allow to soften in hot water for a few minutes.
In a mixing bowl, mix together the olive oil, milk and eggs.
Drain the spinach leaves and add to the egg mixture. Add the flour, herbs and chopped spring onions to the same mixture and gently stir in the Klein River Havarti.
Keep 1 third of the grated cheese, to sprinkle over the top of the mixture once it is in the baking pan.
Pour the mixture into a greased baking pan and bake in a pre-heated oven (180 degrees Celsius) for 30min.
Once your frittata is ready, remove from oven and allow to rest for a few minutes before serving.
This lovely frittata can be served as breakfast, lunch or dinner.
