Specialty white mould cheese sprinkled with black vegetable ash which changes the PH during the maturation process making it even creamier. This cheese is sold at 20 days, reaches full ripeness at 30 days and can be left to ripen for up to 40 days for a truly ‘strong’ camembert flavour.
