One of two cheeses made in a 4 kg loaf-shape and only spending one day in the brine bath. Colby defines ‘all- purpose’ and can be grated, wedged, melted, eaten on its own and slices wonderfully!
Creamy once you get through the slightly young texture. The fermentation uses mesophilic, thermophilic and gas-forming cultures to achieve this unique open texture.
Colby is a popular, playful cheese for children and those who prefer a mild flavour. It is enjoyed in many restaurants and delis throughout the Cape due to its versatility, ease of use and tangy flavour.
