Winner of the 2014 Dairy Product of the Year in South Africa, Grana cheese is a hard, crumbly cheese and is a lesson in patience. It takes a full year for Grana to reach optimal maturation.

This cheese requires 2 scalding processes. One for the mesophilic cultures which adds the fruity characteristics and acidification. The seconds scalding assists in providing a hard texture and reduced moisture content in the cheese. The curd is cut as small as possible to exude whey from the curd.

A little goes a long way with this cheese and it is extremely versatile. On the Farmstead we eat Grana cheese on its own… a wooden board, cheese knife and wedge of Grana and you’re on your way!
